Ingredients

1 avocado
½ cup Greek yogurt
3 tablespoons cilantro leaves
1 clove garlic
2 tablespoons lemon juice
1 tablespoon water, plus more as needed
1 teaspoon salt, plus more for seasoning
1 teaspoon ground pepper, plus more for seasoning
4 3-ounce salmon fillets
1 tablespoons olive oil

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
  2. Combine avocado, yogurt, cilantro, garlic, lemon juice, 1 tablespoon water, and 1 teaspoon each salt and pepper in a food processor and blend until smooth. If necessary, add more water, 1 tablespoon at a time, until sauce reaches desired consistency.
  3. Place fish skin-side down on prepared baking sheet. Season with salt and pepper and brush with olive oil. Bake fish until just cooked through, 8 to 10 minutes. Fish should register 145 degrees Fahrenheit using an instant-read thermometer in the middle of the fillet.
  4. Serve fish topped with sauce.
