Watermelon and Mint Gazpacho

Ingredients

2 pounds watermelon, seeded and chopped
¼ cup fresh cilantro, chopped, plus more for garnish
3 tablespoons fresh lime juice
2 tablespoons fresh mint leaves, chopped, plus more for garnish
2 tablespoons olive oil
1 large tomato, chopped
1 large cucumber, peeled and chopped
Salt and pepper to taste

Instructions

  1. In a blender, combine watermelon, cilantro, lime juice, mint leaves, olive oil, tomato, and cucumber and puree until smooth. Add salt and pepper to taste.
  2. Pour the gazpacho into a bowl and refrigerate.
  3. When ready to serve, garnish with cilantro and mint leaves.
